A series signed by the INRS Foundation.<\/strong><\/p>\n\n\n    \n<div class=\"wp-block full-width-image \">\n    <div class=\"image-ctn\">\n        <img decoding=\"async\" src=\"https:\/\/inrs.ca\/wp-content\/uploads\/ucs-1-1.jpg\" alt=\"\" \/>\n    <\/div>\n    <p><\/p>\n<\/div>\n\n\n<p class=\"has-drop-cap wp-block-paragraph\">Science and its applications are the common thread running through Jacinthe C\u00f4t\u00e9\u2019s career, which has already taken a number of twists and turns, from nutrition to communications to the agri-food industry. Having been on the job market for over a decade after completing her master\u2019s studies, it was the quest for the antimicrobial properties of cranberries that led her to take part in research that earned her a doctorate in biology at INRS.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jacinthe C\u00f4t\u00e9 first trained to become a nutritionist at <a href=\"https:\/\/www.mcgill.ca\/\">McGill University<\/a> and practised the profession part-time while undertaking a master\u2019s degree in agri-food science and technology. \u201cI felt that my training lacked an analytical chemistry component,\u201d she recalls. \u201cThe effects of processing on the nutritional value and properties of foods were not sufficiently covered in the nutrition programme,\u201d she says. Although she enjoyed her master\u2019s studies and her dissertation supervisor offered her an accelerated route to a doctorate, she declined the offer. \u201cI was looking forward to graduating because I was very attracted to the job market. I was considering opportunities in public health or industry. I chose the latter, and that has defined the course of my career,\u201d she says.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the same time, while studying for her master\u2019s degree, she began publishing a column in the Gesca group of dailies across Quebec (<em>La Presse<\/em>, <em>Le Soleil<\/em>, <em>Le Droit<\/em>, <em>Le Nouvelliste<\/em>, etc.). Her articles on nutrition issues, food processing and the nutritional value of food appeared in these newspapers for a dozen years. \u201cI\u2019ve always really enjoyed this communication aspect of science. For me, it was a matter of course to share my knowledge at conferences, in interviews and in columns in the media,\u201d she says.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After an initial stint at <a href=\"https:\/\/www.lallemand.com\/en\">Lallemand<\/a>, it was while working in technical support and R&amp;D on the development of industrial cranberry-based products at the processor Canneberges Atoka (now <a href=\"https:\/\/www.oceanspray.ca\/\">Ocean Spray<\/a>) that she met Professor <a href=\"https:\/\/inrs.ca\/en\/research\/professors\/monique-lacroix\/\" target=\"_blank\" rel=\"noreferrer noopener\">Monique Lacroix<\/a>, a specialist in applied food science, at a conference.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"536\" src=\"https:\/\/inrs.ca\/wp-content\/uploads\/canneberges_238808346-1024x536.png\" alt=\"\" class=\"wp-image-168593\" srcset=\"https:\/\/inrs.ca\/wp-content\/uploads\/canneberges_238808346-1024x536.png 1024w, https:\/\/inrs.ca\/wp-content\/uploads\/canneberges_238808346-300x157.png 300w, https:\/\/inrs.ca\/wp-content\/uploads\/canneberges_238808346-768x402.png 768w, https:\/\/inrs.ca\/wp-content\/uploads\/canneberges_238808346.png 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cIn short, the company was looking to develop a cranberry juice concentrate with a better flavour profile. At the same time, there was an interest in isolating cranberry fractions in order to study the effects of the process on the juice&#8217;s antimicrobial properties,\u201d she sums up. While the services of Pre Lacroix\u2019s laboratory were retained to carry out the study, Ms C\u00f4t\u00e9 found herself \u201crubbing shoulders with a lot of INRS students and embarking myself on an opportunity for doctoral studies as part of my work. It was a great collaboration between academic and industrial research and, as a bonus, I obtained a degree and had the chance to meet researchers with whom I am still in contact,\u201d she says with humour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">She has a very positive impression of her interactions with the <a href=\"https:\/\/inrs.ca\/en\/inrs\/research-centres\/armand-frappier-sante-biotechnologie-research-centre\/\">Centre Armand-Frappier Sant\u00e9 Biotechnologie<\/a> community, even though she didn\u2019t spend much time on the Laval campus because she was doing some of her research at her company\u2019s laboratory in Centre-du-Qu\u00e9bec. She also had the opportunity to rub shoulders with members of the student and scientific community at the <a href=\"https:\/\/inrs.ca\/en\/linrs\/centres-de-recherche\/eau-terre-environnement-research-centre\/\">Centre Eau Terre Environnement<\/a> as part of her work in food processing. <\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<figure class=\"wp-block-image alignright size-full is-resized is-style-rounded\"><img loading=\"lazy\" decoding=\"async\" width=\"367\" height=\"459\" src=\"https:\/\/inrs.ca\/wp-content\/uploads\/Jacinthe-Cote.jpg\" alt=\"\" class=\"wp-image-168621\" style=\"aspect-ratio:1;object-fit:cover;width:234px;height:auto\" srcset=\"https:\/\/inrs.ca\/wp-content\/uploads\/Jacinthe-Cote.jpg 367w, https:\/\/inrs.ca\/wp-content\/uploads\/Jacinthe-Cote-240x300.jpg 240w\" sizes=\"auto, (max-width: 367px) 100vw, 367px\" \/><\/figure>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\">\u201cAt INRS, I met people who were enthusiastic, passionate and focused on the relevance of their research work.\u201d<\/p>\n<cite>Jacinthe C\u00f4t\u00e9, PhD in Biology (2011), Senior Director, Innovation and R&amp;D at Farinart<\/cite><\/blockquote>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">She says that her doctoral degree has given her an important stamp of credibility: \u201cI noticed that it increased the value of the words that came out of my mouth. I saw that it commanded respect in research and development and that my employer attached a lot of importance to it,\u201d she says of Lallemand Boulangerie, in the Hochelaga-Maisonneuve district, where she was director of product management.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With hindsight, she says one shouldn\u2019t hesitate to go back to graduate studies. However, she advises women to continue their studies as much as possible before having children, given the difficulties of studying when you have dependents. \u201cFinish your studies, then you can think about taking time off, planning a trip, starting a family\u2026,\u201d she recommends. Although when she was younger she didn\u2019t feel the desire to study for a doctorate, which she associated with an academic career, she is proud to have kept an open mind, returned to her studies and completed her doctoral thesis when her daughter was less than a year old.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">She also encourages students to get a varied education in the sciences and even to complement their studies with management studies in order to have \u201ca wider range of knowledge and open up even wider career opportunities,\u201d she says. She adds that doctoral studies are \u201can opportunity to develop a variety of skills: from project management to writing and publishing, as well as managing staff, communications and grant applications. In the end, the PhD allowed me to do a lot of things that weren\u2019t on my original path,\u201d she sums up.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After briefly stepping away from applied research to work at National Public Relations, she is now back in industry as Senior Director, Innovation and R&amp;D, at<a href=\"https:\/\/farinart.ca\/\"> Farinart<\/a>, a producer of grain blends and flours. She says she always relies on science in her work. \u201cFacts and verifiable data are essential,\u201d she says. \u201cStarting a conversation with emotions or subjective elements is a recipe for things to get out of hand,\u201d she adds. \u201cRelying on facts rather than perceptions is what opens up the possibility of dialogue and constructive exchanges. It\u2019s the basis of relationships and human relations. It\u2019s the approach I use for both businesses and consumers,\u201d she concludes.<\/p>\n\n\n\n<p class=\"has-text-align-right wp-block-paragraph\"><em>[As shared in
